Applesauce Spice Walnut Mabon Muffins
Either use muffin liners or grease and flour the muffin tin so they will fall out when done. Preheat oven to 350°F. Yield: 1 dozen muffins
Ingredients:
1 1/2 cups flour
1 1/2 teaspoons baking powder (heaping)
1/2 teaspoon baking soda
1 teaspoon cinnamon (can use more or less)
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 large eggs
1 cup light brown sugar (can use more)
1/2 cup butter
1 1/4 cups unsweetened applesauce
1 1/4 cups chopped walnuts
Optional Spice Topping Sprinkle:
6 -7 tablespoons sugar
1/2 teaspoon each of cinnamon, allspice,
and nutmeg
DIRECTIONS
Mix together first 7 dry ingredients in a bowl.
Melt butter and set aside to let cool.
In another large bowl whisk together eggs and brown sugar until well combined. Add in cooled butter whisking continuously until mixture is creamy. Stir in applesauce.
Into the bowl of liquid ingredients, fold in flour mixture until JUST combined. Do not overwork. Stir in nuts. Spoon batter into muffin tin.
Set oven rack to second-lowest position. Bake for about 20-22 minutes, or until muffins test done with a clean toothpick test poke. Remove from stove area to cool in pan for 5 minutes; then remove from pan to a rack to cool.
To make the topping: stir together all ingredients then sprinkle over tops of muffin batter. Alternative toppings: just dust with powdered sugar or ice with store-bought cream cheese frosting. They are delicious as is!
